A month on the roof
Chhat means roof. Every jar sits out in the sun on ours before it comes to you, the way jars sit out on roofs across north India every April and May.
That's the whole method. Salt, oil, sun, and someone going up the stairs to shake them.
How a jar gets madeEat it with something hot
A spoon of Raw Mango on a paratha straight off the tawa, with ghee. Each jar's page says what it goes with, and how long it keeps once open.

Before you order
- Will it leak in the post?
- Each jar is sealed under the lid, wrapped, and packed upright in a box with paper around it. If oil gets out anyway, send a photo and we post another.
- Does it need the fridge?
- No. Salt, oil and sun keep it. Use a dry spoon and keep the oil above the pickle.
- Any preservatives?
- None added. Salt, mustard oil, lime juice and the sun do the keeping, the same as in any home pickle jar. The Lime jar has no oil at all.
- I'm allergic to mustard.
- Three of the four are made in mustard oil with mustard seed. Lime has no mustard in the recipe but is made in the same kitchen.
- How hot is hot?
- Each jar has a sour scale and a heat scale on its page. Green Chilli is the only properly hot one.
- How long does it take to arrive?
- Jars leave the roof on Mondays and Thursdays, and most arrive two to four days later.
