Studio project by Turnaround. Chhat is invented: no such shop or product exists, and nothing here can be bought.

The roof

A flat, whitewashed roof that gets sun from nine until four, a cot to sit on, and room for about two hundred jars at a time.

Nothing goes in a jar that couldn't be bought at the market that morning.

How a jar of Raw Mango gets made

  1. Day 1, morningCutMangoes cut the day they come down from the tree, stone and all, into chunks.
  2. Day 1, afternoonSalt and drySalted and turmeric-rubbed, then spread on cloth in the sun until the edges curl.
  3. Day 2Spice and oilMustard, fenugreek and chilli in, then mustard oil heated until it smokes and left to cool.
  4. Days 3 to 30SunUp on the roof under a cloth. Shaken every morning, brought in if it rains.

Small batches, on purpose

One jar size of each pickle goes up at a time. When a batch runs out, the page says when the next one comes down off the roof.

Your cart

Jars leave the roof on Mondays and Thursdays, packed upright. Checkout is off, because this is a concept.
